Proteini ulaze u sastav svih mišića kostiju, kože, unutrašnjih organa i dr., regulišu aktivnost ćelija, kao i brzinu svih biohemijskih reakcija, imaju i zaštitnu i transportnu ulogu, ali, svakako, ono što je nama najbitnije, je njihova gradivna uloga.
